Man Meal Of The Week: Hot Chocolate Nutella Mug Cake

Food blogger Natalie Katz of Young and Hungry and MenStuff have partnered together to bring you the Man Meal of the Week every Friday.

This is probably THE easiest cake I have ever made. It literally takes under 5 minutes to make. I cooked the cake in a large bowl/mug for presentation purposes but you can split the mixture between 4 small-medium mugs.


INGREDIENTS

¾ cup all-purpose flour
8 tbsp hot chocolate powder
¾ tsp baking powder
8 tbsp granulated sugar
1/8 tsp salt
¾ cup + 4 tbsp milk
8 tbsp vegetable oil/coconut oil
1 naartjie/orange, diced
1 tsp nutella per mug (optional)
Fresh Mint
Icing sugar


METHOD
Serves 4
Preparation 2 minutes
Cooking time 1 minute per mug


In a large bowl, sieve dry ingredients, then add wet ingredients and beat until combined and there are no clumps. Distribute the mixture between microwave-safe mugs, you want enough head space so the cake can rise without spilling over. Add 1 tsp of nutella into the middle of the batter.

Place a piece of roller towel in the microwave to catch overflow. Bake in the microwave on high for 70 seconds (for a 950 watt microwave) or 1-2 minutes for a less strong microwave , but watch closely when they have properly risen carefully take them out.

Dice the citrus and place on top of each mug, top with fresh mint and a dusting of icing sugar.
